Great for cold winter mornings, this simple porridge delivers on flavor and nutrition.
INGREDIENTS
2 cups water
1/2 cup Buckwheat Groats
1 teaspoon cinnamon
1/2 teaspoon cardamom
1 teaspoon vanilla
1 small apple cut into cubes
handful of crushed walnuts
pinch of sea salt
DIRECTIONS
- Bring water to a slow boil. Add the buckwheat groats and a pinch of sea salt. Stir a few times to ensure the porridge doesn’t stick to the bottom of the pan.
- Let simmer for 5 minutes, then add cinnamon, cardamon, vanilla and apple cubes. Stir and let simmer for another 5-10 minutes, or until most of the moisture is gone. At this point, give the porridge a taste test. If the texture is to your liking, add the crushed walnuts and enjoy. If the texture is too crunchy, add 1/2 cup -1 cup more water and continue to simmer for another 5-10 minutes.
Delicious additions – a splash of plant milk, extra cinnamon, a teaspoon maple syrup, a pinch of coconut sugar, or for some added protein – a 1-2 tablespoons of almond or peanut butter.
